What Extracurriculars Are Strong for Industrial Engineering Applicants?

I’m an international high school student targeting T30 universities in the U.S. for a BS in Industrial Engineering. My academics are strong, including IB, SAT, and IELTS, but my extracurricular profile is much weaker. There are very limited engineering-related programs where I live, so I’m looking for realistic EC ideas I can build independently or locally. What kinds of activities would be most relevant for Industrial Engineering, such as optimization projects, data analysis, business operations, research, competitions, coding, leadership, or community-based problem solving? Would especially appreciate suggestions from students who applied to competitive U.S. engineering programs without access to formal STEM opportunities.
